Petty Kitchen Knife 135 mm with Aogami Super Steel, Walnut Handle and Double-Bevel Edge for Precise Prep
This 135 mm Petty kitchen knife is designed for nimble prep such as chopping shallots and garlic, mincing herbs, and working with small proteins. Its compact profile suits professional line work and home kitchens where a capable knife can stay close at hand.
The blade uses Aogami Super carbon steel in a stainless-clad Sanmai construction. The exposed carbon-steel edge should be wiped promptly after use, especially after acidic ingredients, to help prevent rust and discoloration. Wash by hand with warm water and mild dish soap, and keep it away from the dishwasher.
Made by Shiro Kamo in the Takefu Knife Village tradition, the knife has a walnut handle with an ebony ferrule and maple liner. Avoid bones, frozen foods, nuts, hard candies, parmesan rinds, woody stems, and other hard materials.
