Baking Steel Modernist Cuisine Special Edition brings a thick, heat-retaining carbon steel surface to home pizza, bread, and searing. Its 3/8-inch solid steel construction and 22-pound weight provide substantial thermal mass for crisp crusts and strong heat recovery.

The 16 x 14 inch steel is pre-seasoned by hand in Massachusetts and ready to use. Place it in a standard home oven, or use it on gas and charcoal grills and on gas, electric, or induction cooktops as a griddle.

Use it for Neapolitan, New York-style, Detroit-style, and frozen pizza, along with sourdough, baguettes, focaccia, pancakes, smashburgers, quesadillas, grilled cheese, bacon, steaks, and vegetables.

After cooking, let the steel cool completely and wipe it clean. Dry it thoroughly, apply a light coat of oil after cleaning, and re-season occasionally to maintain its surface.
